Sundays are for relaxing and being lazy… said no mom ever. Today, Sundays are my prep day to help me get through the rest of the week. I catch up on laundry, help the kids with all their homework that’s due on Monday (…sigh..) and do my grocery shopping and meal prepping for the week. These days, our weeks are jammed packed full of school and work commitments, taxiing kids to sports and everything else in between. One thing that helps at least make dinner time go smoothly is planning ahead.
Sunday morning I sit down with my coffee and figure out my week of meals. This involves asking everyone if they have any requests, seeing what I have to use in my fridge and freezer and then planning. Many of these are my “Big Dumb Dinners” but they are the best for nights when you need something easy and quick!
MONDAY

Roasted broccoli (lay broccoli on a baking sheet, drizzle with olive oil, salt and pepper and bake 350 degrees for 20 minutes)
