It is peach season! I went to our local orchard with my kids yesterday to pick peaches and we came home with TONS! It was so much fun until I realized that I have to now eat or cook all of them?! Well, this is what I came up with- a peach crostini. I’m sure you have noticed that I love my crostinis so this one is just a summer version. This is a great one to make ahead and assemble right before your guests arrive.
Summer Peach Crostini
Ingredients
- balsamic vinegar
- 1 loaf of french bread sliced and toasted
- 2 large peaches halved and pitted
- 4 oz goat cheese
- arugula
- prosciutto
Instructions

Grill the peach halves over medium high heat for 2-3 minutes. Remove and slice.

To assemble, spread the goat cheese on the crostini and top with arugula, prosciutto and a slice of grilled peach. Drizzle with the vinegar and enjoy!
