You are either a pumpkin spice person or you are not. I am but there are rules. I will NOT have a pumpkin spiced latte. I WILL have a pumpkin spiced moscow mule. I will NOT have a pumpkin spiced latte. I WILL have a pumpkin spiced ice cream sandwich…maybe only if it is sandwiched between gingersnap cookies?? I will NOT have a pumpkin spiced latte. I WILL have pumpkin spice waffles…obviously covered in a generous amount of warm maple syrup and whipped cream. So you get where I am going here….
Below are some of my favorite pumpkin spiced recipes….not lattes.
Pumpkin Spice Moscow Mule
I mean, it is fall....
Ingredients
- 1 cup water
- 1/4 cup pureed pumpkin
- 2/3 cup brown sugar
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1 Tbsp vanilla extract
- 4 oz ginger beer
- 1.5 oz vodka
Instructions

For the simple syrup: In a saucepan, combine all ingredients and stir over medium heat until the sugar dissolves. On low heat, continue to summer for 10 minutes, whisking occassionally. Remove from heat and allow to cool.

For the cocktail: Combine the ginger beer, pumpkin spice syrup and vodka in a shaker. Shake well and pour over ice. Garnish with a cinnamon stick.
Pumpkin Spice Waffles
It is a great way to get your kids to eat their veggies...and by veggies I mean, sugar.
Ingredients
- 1/2 cup coconut oil in liquid form
- 1/2 cup sugar
- 1/2 cup brown sugar
- 15 oz pumpkin puree
- 2 eggs separated
- 1/2 cup whole milk
- 1 tsp Pumpkin Pie Spice mix
- 1 tsp vanilla extract
- 1 1/2 cup all purpose flour
- 1 Tbsp baking powder
- 1/2 tsp salt
Instructions

While your waffle iron is heating, whisk together the coconut oil, both sugars, pumpkin puree, egg yolks and milk until smooth.

Add the pumpkin pie spice mix and vanilla extract. Stir to combine.

In a separate bowl, mix the flour, baking powder and salt.

Stir the flour mixture into the pumpkin mixture until just combined.

In a bowl with an electric mixer, whisk the egg whites until soft peaks.

Carefully fold the egg whites into the batter mix.

Follow the waffle iron instructions and pour the batter on. Cook until crispy and golden brown.

Serve with whipped cream, maple syrup and cinnamon.
