Adapted from Martha Stewart’s banana bread, these muffins are light and healthy with a touch of sweetness. My kids LOVE these and they never last long in my house.
Banana Chocolate Chip Muffins
Start your weekends off right with these delicious muffins!
Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 3/4 tsp salt
- 3 eggs
- 1/2 cup sugar
- 2 Tbsp vanilla extract
- 4 ripe bananas mashed
- 1/2 cup buttermilk
Instructions

Preheat the oven to 350 degrees. Prepare your muffin pans with non stick cooking spray or muffin liners.

In a large bowl, mix together the flours, baking soda and salt. Set aside.

In a bowl with an electric mixer, beat the eggs, sugar and vegetable oil.

Slowly add the flour mixture until combined. Add the mashed bananas, vanilla buttermilk and chocolate chips until just combined. Don’t over mix.

Divide the batter into the muffin pan. Bake for 30 minutes until golden brown. Transfer to a rack to cool completely.
