Carrot Cake

Ingredients

For the cake:

  • 1 1/3 cup flour
  • 1 cup sugar
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg freshly ground
  • 1/2 tsp allspice
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 2/3 cup vegetable oil
  • 3 large eggs
  • 2 cups carrots finely grated
  • 1 cup walnuts

For the icing:

  • 8 oz cream cheese room temperature
  • 1/2 cup unsalted butter room temperature
  • 1/2 cup brown sugar
  • 1 3/4 cups powdered sugar
  • 1/2 tsp salt
  • 2 Tbsp sour cream
  • 1 tsp vanilla

Instructions

For the cake:

  1. Preheat the oven to 350 degrees. 

  2. Prepare two round cake pans by greasing and flouring them. Cut parchment and put it on the bottom of each pan.

  3. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, cloves, nutmeg, allspice and salt. 

  4. Stir in the vegetable oil and eggs. 

  5. Stir in the carrots and walnuts.

  6. Divide into the two pans and bake for 30 minutes or until a cake tester comes out clean. 

  7. Let cool completely. 

For the Icing:

  1. Beat the butter and cream cheese together in a stand mixer. 

  2. Add the rest of the ingredients and beat until smooth and creamy. 

For assembly:

  1. Ice the cake to your liking and EAT IT!
