Pasta with Sausage and Peppers

Ingredients

  • 1 Lb linguine
  • 1 red pepper sliced thin
  • 1 onion sliced thin
  • 2 garlic cloves minced
  • 2 Tbsp olive oil
  • 1 lb sweet Italian sausage casing removed
  • 1 28oz can chopped tomatoes
  • 1/4 cup red wine
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp sugar
  • 1/4 cup heavy cream
  • fresh basil for garnish

Instructions

  1. In a large pan, saute onion, garlic and red pepper in oil. Stir until the vegetables begin to brown.

  2. Add meat and brown.

  3. Add the tomatoes, wine, oregano, dried basil and sugar. Boil gently.

  4. Boil the pasta according to the directions. Drain.

  5. To the tomato mixture, add the cream and salt and pepper. Simmer for 3 minutes.

  6. Mix the pasta into the tomato mixture and garnish with fresh basil.
