Ice Cream

This is adapted from Martha Stewart and is a great base to ice cream.

Ingredients

  • 8 egg yolks
  • 1 cup sugar
  • 1/4 tsp salt
  • 2 cups milk
  • 2 cups heavy cream

Instructions

  1. In a saucepan, off the heat, whisk together the sugar, salt and egg yolks. 

  2. Slowly whisk in the milk.

  3. Cook over medium heat for about ten minutes, stirring constantly with a wooden spoon, until the custard coats the back of the spoon.


  4. Pour the custard through a sieve into a glass bowl. 

  5. Stir in the heavy cream.

  6. If using flavorings, add them now. Chill the mixture in the fridge until cooled completely.

  7. Pour the mixture into an ice cream maker and churn until desired consistency.
