Couscous with Pine nuts and Currants

This is a great and easy side dish!


  • 1/2 stick butter
  • 3/4 cup shallots chopped
  • 2 cups chicken stock
  • salt and pepper
  • 1 1/2 cups couscous
  • 1/2 cup pine nuts toasted
  • 1/4 cup dried currants
  • 2 tbsp parsley chopped


  1. Melt the butter in a large saute pan. Add the shallots and cook over medium-low heat for 3 minutes, or until translucent. Add the chicken stock, salt and pepper and bring to a boil. Turn off the heat and stir in the couscous. Cover the pan and set aside for 10 minutes. Add the pine nuts, currants and parsley and fluff with a fork. Serve immediately.
