Salmon and Cucumber

This is a light and refreshing appetizer- perfect for any party!

Course Appetizer

Ingredients

  • 1 lb Nova Scotia Lox
  • 2 English cucumbers sliced
  • 1 bunch Fresh dill
  • 1 package Cream cheese room temperature
  • 3 ounces Goat cheese room temperature
  • 2 Tbsp capers
  • 1 Tsp Kosher salt
  • 1/2 tsp pepper
  • wood skewers

Instructions

  1. Slice the lox into pieces about 2 inches long and set aside.

  2. Mix the cream cheese, goat cheese, capers, salt and pepper in a bowl. 

  3. Assemble the salmon skewers but putting about 1 Tsp of the cream cheese mixture on a slice of cucumber. Top with a piece of lox and put on the skewer for easy grabbing!
