Baked Brie

Ingredients

  • Frozen puff pastry- thawed
  • Wheel of brie
  • 1/2 lb of mushrooms- chopped
  • 2 garlic cloves
  • 3 scallions- green and light green parts- chopped
  • 1/4 cup parsley- chopped
  • salt and pepper
  • 1 egg yolk
  • 2 Tbsp heavy cream

Instructions

  1. Preheat the oven to 375 degrees.
  2. Saute mushrooms, garlic, scallions, parsley and salt and pepper in 2 Tbsp of olive oil. Cook until the liquid from the mushrooms has cooked off.
  3. Meanwhile, using a vegetable peeler, peel the white off the brie and cut the wheel in half, horizontally.
  4. Roll the puff pastry out and place the bottom half of the brie in the center. Top the brie with the mushroom mixture. Place the other half of the brie on top. Pull the sides of the pastry over the brie, making it look as pretty as possible.
  5. Make an egg wash by mixing one egg yolk with 2 Tbsp of heavy cream. Brush the egg wash over the top of the pastry.
  6. Bake for 20-25 minutes or until golden brown.
