Twice Baked Potatoes

Ingredients

  • 5 Lg baking potatoes
  • 3 Tbsp butter
  • 1-16 oz sour cream
  • 1/4 cup Parmesan cheese
  • 4 scallions- chopped
  • salt and pepper

Instructions

  1. Preheat the oven to 450 degrees.
  2. Pierce the potatoes with a knife and bake for an hour or until soft.
  3. When cool enough to handle, cut the potatoes in half and scoop out the inside, keeping the skin in tact.
  4. Mix the potato, and the rest of the ingredients in a mixer until well combined.
  5. Spoon the mixture back into the skins.
  6. (At this point they can be individually wrapped in plastic wrap and put in the freezer)
  7. Bake the potatoes for 25 minutes or until golden brown on top.
