Halibut with Greek Rice
Ingredients
For the Halibut
- 4 halibut fillets
- 3 Tbsp lemon juice freshly squeezed
- 3 Tbsp olive oil
- 2 garlic cloves minced
- 8 fresh basil leaves chopped
- 3 tsp capers drained
For the Rice
- 1 Tbsp olive oil
- 1 onion chopped
- 4 cups fresh baby spinach
- 1 1/2 cups long grain rice
- 3 1/3 cup water
- 1 Tbsp butter
- 1 lemon juiced
Instructions
For the Hailbut:

Mix the lemon juice, olive oil and garlic together in a small baking dish. Stir in the capers and basil. Add the halibut fillets and let marinade for an hour. When ready, bake in a 400 degree oven for 10 minutes.
For the Greek Rice:

In a sauce pot, add the olive oil. Add the onion and saute until soft and translucent. Add the spinach in batches and let down fully. Add the rice, water and butter. Bring to a boil. Cover and turn the heat down to a simmer. Cook for 20 minutes or until the water is absorbed. Season with salt, pepper and a squeeze of lemon.
For Assembly
