This is the easiest, yummiest recipe! It is perfect for a casual BBQ or Cinco de Mayo! Make it ahead of time, pop it in the fridge and enjoy when you are ready!
Key Lime Cheesecake
The Key Lime Mixture
- 2 8 oz cream cheese blocks room temperature
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 6 limes zested and juiced
- 10 graham crackers
- 3 Tbsp butter melted
- 6 limes zested
In a stand mixer, beat the cream cheese, powdered sugar and vanilla extract until light and fluffy, about 5 minutes. Add the zest and lime juice. Mix until incorporated. Taste test for flavor. You want it to be REALLY limey. Set aside
In a food processor, pulse the crackers until the texture of sand. Pulse in the butter and lime zest.
In a mason jar or glass put a heaping spoonful of the graham crackers. Then top with the cream cheese mixture. Add another layer of the graham cracker and then top with a dollop of the cream cheese mixture. Add a slice of lime for presentation and enjoy!
