Try this refreshing, healthy and delicious poke bowl! All the flavors you crave in a bowl!
Ahi Tuna Poke Bowl
- 8 oz sushi grade raw tuna
- 4 Tbsp coconut aminos
- 2 tsp sesame oil
- 2 tsp rice wine vinegar
- 2 tsp chili garlic sauce
- 2 cups cauliflower rice
- 1/2 avocado diced
- 12 slices cucumber sliced very thin
- 1 cup purple cabbage shredded
- 2 tsp unsalted, roasted peanuts
- 2 Tbsp pickled ginger
- 2 tsp prepared wasabi sauce
- 1 tsp black sesame seeds
Dice the tuna and put into a bowl. Add the coconut Aminos, sesame oil, rice wine vinegar and chili garlic sauce. Stir to combine and put in the fridge for 2 hours to marinate.
Saute the cauliflower rice for 5 minutes, stirring, until heated through. Divide into two bowls.
Top the rice with the avocado, cucumber, cabbage, peanuts and ginger. Add the tuna to the bowl and drizzle with wasabi on top. Sprinkle with black sesame seeds.
